Hello [Life of Meg] friends! It's Courtney from Honeycomb Creative Co. I'm so glad to be here with all of you. Miss Meg is one of my very best friends in the whole world, and let me tell you, she is just as fabulous as she sounds from all of her fun and sassy posts. She's a bit of sunshine every time you see her!
Although I'm a good 2.5 hours away from her, it's so wonderful to be able to keep up with her and get a taste of her cheery-ness through her daily blogging! She is amazing!

Since Meg asked me to a fun little guest post during the summer, it got me thinking about my favorite things about summer. I think one of my very fave aspects of sweet summertime has got to be 4th of July.
Halloween is my favorite holiday, but I think the fourth and Valentine's Day may be close seconds (I know, I'm an off-brand holiday girl : ).

In celebration of this fabulous holiday, I'm sharing a favorite cupcake recipe, and also some fun Independence Day cupcake decorations. Super easy and fun!

The cakes themselves are deliciously moist chocolate cake, and the icing is my fave cream cheese. MMMM...does it get any better? Try it out!
{ Firecracker Cupcakes }
Chocolate Cupcake Ingredients
- 3 c. flour
- 2 c. white sugar
- 1/2 c. cocoa
- 2 tsp. baking soda
- 2 c. water
- 2/3 cup cooking oil
- 2 tbsp. vinegar
- 2 tsp. vanilla
Mix ingredients as for a cake. Fill lined cupcake pans about 2/3 full. Bake at 350 degrees for 15-18
minutes.
Cream Cheese Frosting
(I usually double the recipe for extra creamy cupcakes...)
- 1/2 package of cream cheese, softened
- 3 tbsp. butter, softened
- 2 1/2 c. sifted powder sugar
- 2 tsp. vanilla
Combine cream cheese and butter and beat until fluffy. Add remaining ingredients and beat until smooth.

For the fun toppers, I picked up flag picks, "Uncle Sam hat" picks, sparkly silver, red and blue "pipe cleaners" and wired red sparkly ribbon at my local craft store.
Then I just twisted various colors and combinations I wanted until I achieved a festive fireworks kind of look. Super easy and way too cute!
